Brunch Casserole
Ingredients

bread, trimmed and cubed

sharp cheddar cheese, shredded

milk

dry mustard

sliced mushrooms, drained

cream of mushroom soup

1/2 soup can
milk

2 tablespoons
butter
Instructions
- Fry sausage and cut into bite size pieces.
- Arrange bread in greased 9 X 13 inch pan. Cover with cheese.
- Beat eggs with milk and mustard.
- Add mushrooms. Pour over top.
- Cover and refrigerate overnight.
- Let stand at room temperature for 1 hour.
- Dilute soup with milk and pour over top. Dot with butter.
- Bake at 325 degrees for 1 hour.
Chicken Bogg
Ingredients

whole chicken (we purchased a chicken already cut up)

long grain white rice

Italian seasoning

onion powder

garlic powder
Instructions
- Boil your chicken for about 30 minutes, let cook then remove the skin and bones
- Chop your sausage and pan sear to get a little brown coloring and to add more flavor
- Take 3 1/2 cups of the chicken broth from the boiled chicken pot and add to a separate pot
- Mix everything else together, bring to a boil, reduce and simmer for 30 min.
- ENJOY!
Chili Cheese Sausage Dog Bake
Ingredients

6 strips
cheese sticks cut in half length ways (we used mild cheddar)

1 can
Pillsbury pizza dough

1 can
Chili (or homemade, either way)

1/4 cup
butter
-
1 tsp
garlic salt

1 tsp
fresh parsley
Instructions
- Preheat oven to 375
- Pour chili into a 9 x 13 pan
- Remove the cheese from wrappers and cut length ways. You can also use shredded cheese for this, the cheese sticks are just easier to roll.
- Open the can of pizza dough and roll out, stretching slightly. Cut the dough into 6 equal parts.
- Take a sausage dog and place a strip of cheese on either side. Roll the sausage and cheese into the dough, covering the majority of the sausage dog in dough.
- Place seam side down on top of the chili.
- Bake in warmed oven for 18-20 minutes.
- Remove from the oven, melt the butter and mix with the garlic and parsley, brushing it on the tops of the dogs.
- Enjoy!
Cinnamon Roll Sausage Dogs

large cinnamon rolls

Instructions
- Preheat the oven according to cinnamon roll package instructions.
- Spray pan with cooking spray. Remove sausage links (while I used babylinks, any style can be used with this. Play around and see what works best for you!) and cinnamon rolls from packaging, reserving icing.
- Begin wrapping cinnamon rolls around a link of sausage. I was able to wrap 2 sausage links with 1 cinnamon roll (I used Pillsbury Grands cinnamon rolls). Place on pan, spaced out about 2 inches so that they don't stick together.
- Bake for the directed time (15-20 minutes).
- Remove and drizzle with the cinnamon bun icing. Enjoy!
Cracked Pepper Sausage Fattie

2 Tsp.
BBQ dry Rub (I use 5 parts brown sugar, 3 parts kosher salt, 1 part chili powder, 1 part red pepper flakes)
Instructions
- Form sausage into a chub slightly longer than the link sausage
- Cut an incision the full length of the chub about 3/4 through
- Insert the cracked pepper sausage(Or your favorite Sunset Farm Foods Smoked Sausage) into the chub
- Wrap the chub around the link, sealing all edges
- Smoke at 225 until 160 degrees in center (about 90 minutes)
- Remove from smoker and wrap with aluminum foil for 30 minutes
- Unwrap and cut into 1/2" slices, serving on biscuits or rolls
- OR Chill, unwrap, and cut into 1/4" slices, serve with crackers. For a more cracker friendly size try using Babylink inplace of Cracked Pepper.
Frogmore Stew

Instructions
- Bring a large amount of water to boil (roughly twice the volume of water as the volume of ingredients).
- Add 1/4 cup of salt per gallon of water, celery and Seafood Seasoning to taste.
- Add sausage and boil for 7 minutes; add corn and boil for 7 minutes; add shrimp and boil for 4 minutes (DO NOT OVERCOOK).
- Drain and serve in large bowl or tub.
Guacamole Sausage Dogs

- In a medium sized bowl, mash together the avacados, lime juice and salt.
- Mix in the onions, tomatoes, garlic and cilantro, stirring until well blended.
- Refrigerate 1 hour or serve immediately on top of your favorite Sunset Farm Foods sausage dog!

can Reduced Sodium Chicken Broth
Instructions
- Preheat oven to 350 degrees
- Mix all ingredients together except for chicken broth
- Pour mixture into 3 quart casserole dish
- Pour chicken broth over mixture in the casserole dish
- Cover and bake for 70 minutes or until rice is done.
Mini Mummies

Instructions
- Cut sausage into pieces, about 2 inches each works well
- Roll out the crescent roll dough and cut into thin strips
- Use strips of dough to "mummy" wrap the sausage piece
- Leave a little section near the top uncovered (where you can see the sausage) this is where his eyes will go
- Bake at 400 degrees, for about 10 min.
- Using ketchup or mustard and a toothpick put eyes on your mummies.
- Enjoy!
Mummy Fingers
Ingredients

drops of red food coloring for decorating (optional)
Instructions
- Cut sausage into finger length pieces, each link should make about 3 pieces
- Roll out crescent rolls and wrap around sausage in the approximate shape of a finger
- Take a toothpick and create creases at the knuckle and create the indent of the nail bed
- Press a slivered almond into the nail bed indent
- You can also create warts and blood around the nail by using the toothpick, extra dough and food coloring
- Bake at 400 degrees, for about 10 min.
Pasta Salad with Sausage & Peppers

extra virgin olive oil (plus extra for drizzle if desired)

minced garlic

shallot sliced and seperated

Instructions
- Cook pasta according to package directions. Make sure to reserve 1/3 cup of water when draining. Allow to cool to room temperature.
- Sear sausage and peppers to desired brownness (we prefer for the peppers to still maintain a crunch to them).
- In a medium bowl mix the lemon juice, olive oil, tomato paste, minced garlic, shallot, basil paste and thyme. Mix well and add in the reserved pasta water.
- Combine the pasta, dressing, sausage, peppers, and celery. Toss until coated well. This can be served room temperature or cold, which ever is preferred.
Sausage & Potato Skillet

of Simply Potatoes Steakhouse diced potatoes

1 can
of corn

a dash
of chili powder (optional)
Instructions
- Slice sausage
- Prepare pan as the Simply Potatoes package directs
- Add Sunset Farm Foods sausage and the potatoes
- Drain corn and add it to the skillet
- If you desire a spicier flavor mix in some chili powder
- Finish cooking as the package of potatoes directs
- Serve warm, add cheese and sour cream if desired
Smoked Sausage Pasta Salad
Ingredients

Sunset Farm Brand Smoked Sausage(we used Jalapeño)

1 box
of your favorite pasta ( we used tricolor rotini)

1 can
of sliced black olives
-
1 bottle
of greek salad dressing
-
A dash
of salt, pepper,celery salt, garlic powder and onion powder
-
2-3
Roma tomatoes (or a handful grape tomatoes)
-
1/4 cup
cheese (Parmesan or feta work well)
Instructions
- Boil a large pot of water and cook noodles as directed.
- Drain Noodles.
- In a large bowl add noodles and season with salt, pepper, celery salt, garlic and onion powder.
- Add 1/2 to 3/4 the bottle of greek salad dressing mixing as you go.
- Add tomatoes (cut) and black olives in. Set aside the bowl of pasta.
- Slice sausage and sear in a skillet or you can grill the sausage.
- Mix sausage into pasta, top with cheese and serve.
