Gnocchi Skillet with Sausage & Tomatoes



  • 1 pack Georgia Brand Cracked Pepper cut into coin slices
  • 1/2 tsp coarse kosher salt
  • 1/4 tsp freshly ground pepper
  • 1 pint cherry or grape tomatoes halved lengthwise
  • 1-2 oz. fresh basil


  • Cook the gnocchi according to the package directions. Drain and toss with a little bit of olive oil.
  • Heat a 10 inch or larger cast iron skillet over medium heat with 1-2 tbls of olive oil. Cook the sausage for 3-4 minutes until browned.
  • Push the sausage to one side of the pan and turn the heat to high.
  • Add the sliced tomatoes, skin side down allowing them to cook until the skin begins to blister and wrinkle but not so long that the tomatoes begin to sauce.
  • Mix with the sausage and cook for another 1-2 minutes. Add in the gnocchi and remove from heat.
  • Add the fresh basil and serve immediately. Can garnish with parmesan if preferred.
