Smoked Ham-Cooking Procedure
Ingredients
18-20 lb.
Ham
Glaze Ingredients:
8 oz can
of crushed pineapple (do not drain)
½ cup
of brown sugar
1 tablespoon
of corn starch
1 tablespoon
of lemon juice
Instructions
Cooking pan should be a roaster or broiler type to allow ham juices to drain.
Ham should be prepared in the following method before cooking.
Remove all the skin, after this; score the ham on the outer fat side with a knife down to the lean meat in a diamond pattern about ¾’’ size. Scoring the surface serves two purposes, first it gives it a nice dressed appearance,second it aids in holding the pineapple topping glaze in place.
You are now ready to place the ham on the pan.
To prevent the ham from drying out during cooking a piece of tin foil should be cut large enough to cover the top scored surface.
The oven should be preheated to 275 degrees. Place the ham in the oven and cook for approximately eight hours, check the internal center temperature,it should reach 160 degrees.
After the ham has reached 160 degrees internal you are ready to apply the glaze. It takes approximately 15 minutes to prepare the glaze.
Mix all ingredients for the glaze on top of stove until it thickens and starts to bubble stirring constantly.
Apply the glaze over the top and sides of the ham,then put the ham back in the oven cooking until the glaze has dry appearance this would only take about 15 minutes.
